Cheesy Ground Beef Taco Dip

Ingredients
- 1 Tablespoon Olive Oil, divided
- 1 pound Ground Beef
- 1 packet Taco Seasoning
- 2 Tablespoons Ranch Seasoning
- 15-oz can Fire Roasted Diced Tomatoes
- 15-oz can Black Beans
- 10-oz can Corn
- 4-oz can Diced Green Chiles
- 8 oz Colby Jack Cheese, cubed
- 8 oz Cream Cheese, cubed
- 2 oz Cotija Cheese (optional)
Instructions
- Heat a large skillet over medium-high heat with a 1/2 tablespoon of olive oil. Add the ground beef and brown one side before breaking apart and fully cooking.
- Once the ground beef is fully cooked, add the remaining ingredients up to the cheese and stir everything together.
- Reduce to a low heat and gradually add the colby jack and cream cheese, stirring until melted. Avoid adding all the cheese at once to prevent clumping.
- Optional: Once the cheese is incorporated, top the taco dip with the cotija cheese, drizzle with a 1/2 tablespoon of olive oil, and place under your oven's broiler for 3-5 minutes until golden brown.
- Garnish with fresh cilantro, pico de gallo, guacamole, and sour cream, if desired.
