Taco Dip with Ground Beef

Cheesy Ground Beef Taco Dip

Ingredients

  • 1 Tablespoon Olive Oil, divided
  • 1 pound Ground Beef
  • 1 packet Taco Seasoning
  • 2 Tablespoons Ranch Seasoning
  • 15-oz can Fire Roasted Diced Tomatoes
  • 15-oz can Black Beans
  • 10-oz can Corn
  • 4-oz can Diced Green Chiles
  • 8 oz Colby Jack Cheese, cubed
  • 8 oz Cream Cheese, cubed
  • 2 oz Cotija Cheese (optional)

Instructions

  1. Heat a large skillet over medium-high heat with a 1/2 tablespoon of olive oil. Add the ground beef and brown one side before breaking apart and fully cooking.
  2. Once the ground beef is fully cooked, add the remaining ingredients up to the cheese and stir everything together.
  3. Reduce to a low heat and gradually add the colby jack and cream cheese, stirring until melted. Avoid adding all the cheese at once to prevent clumping.
  4. Optional: Once the cheese is incorporated, top the taco dip with the cotija cheese, drizzle with a 1/2 tablespoon of olive oil, and place under your oven's broiler for 3-5 minutes until golden brown.
  5. Garnish with fresh cilantro, pico de gallo, guacamole, and sour cream, if desired.
